I don’t make that much lunch dishes. I lunch at work were they offer a broad range of healthy options, so no need to bring my own salad. In the weekend I like to make a vegetable tortilla. This tortilla is without the traditional potatoes but with sweet potatoes! I think they have more taste than the regular potatoes. I prefer the sweet potato, not only because they taste better, but the affect on the blood sugar level less is than the regular potato. This helps me in maintaining a healthy diet. Both sweet and regular potatoes have nutrients ingredients including; fiber, vitamin C and antioxidants. Sweet potatoes contains much more vitamin A. All in all a very tasty and nutritious ingredient to use in you cooking and this tortilla is perfect for that! What ingredients do you need for one Vegetable Tortilla?
Ingredients:
- 60 minutes of your time (most of the time is waiting….)
- Small frying pan (20 cm)
- Bowl
- Whisk
- Plate
- Spatula
- Eggs: 5 biological
- Granted cheese: 100 gr
- Sweet potato: 2 small ones
- Bell Pepper/Paprika: 1 red or orange one
- Red onion: 1
- Garlic: 2 cloves
- Italian dry herbs: 1 tablespoon (i.e. basil, rosemary, oregano)
- Olive oil: 3 tablespoons
- Salt and Pepper
How to make this Vegetable Tortilla?
Peel the sweet potatoes and cut them in cubs of ± 1.5 cm. Clean the bell pepper and cut in same chunks. Clean the onion and cut is small parts the same for the garlic (very small). Heat up the fire with the frying pan with 1 tablespoon of olive oil. Fry the all the veggies till the sweet potato is relatively soft. In the meantime scramble the eggs in the bowl with a whisk and add the granted cheese trough the mixture. When vegetables are ready add this to the bowl and stir around. Add the herbs, salt and pepper.
Clean the frying pan and start heating it up again with the remainder of the olive oil. Make sure you make it really hot and add the mixture from the bowl in the frying pan. Turn down the heat to the smallest fire on the stove and put a plate on the frying pan to keep the heat underneath. Wait for 30-45 min and check now and then to see if the whole mixture is solid and firm. Use the spatula to make sure the tortilla is lose from the sides and bottom. Take the plate and put over the frying pan, turn around so the tortilla will fall on the plate. Push the tortilla back in the frying pan to fry the other side of the tortilla. Bake for another 10-15 min. Your tortilla is ready!!! Put it on a plate and cut into 4-6 pieces, you can add some side salad or bread to make it a more complete meal.
I put some of the tortilla parts in the fridge; this way I always have a healthy meal or snack at hand!
