Nori Omelet Wrap with Salmon

I don’t make lunches too often. During the week I have a salad for lunch at work, so pretty easy. In the weekends I normally go out with friends for a coffee and lunch at our local lunchrooms and cafeterias. But during the Christmas and New Year’s I had to make myself a healthy lunch. I found this nori omelet wrap with salmon recipe in a magazine and twisted it a bid of course. Nori is made of seaweed and is a sea vegetable! What ingredients do you need for one lunch Nori Omelet Wrap?

  • 15-20 min of your time
  • Bamboo mat
  • Frying pan
  • Bowl + whisk (Dutch: garde)
  • Nori sheet: 1 piece
  • Eggs: 2 biological preferably
  • Smoked salmon: 100 gr slice
  • Avocado: ¼ (3 slices)
  • Parsley fresh : 1 tablespoon cut
  • Coriander fresh: 1 tablespoon cut
  • Turmeric: ½ teaspoon
  • Wasabi: 1 cm out of the tube, but depends how spicy you like it!!!
  • Sesame seeds: 1 teaspoon
  • Soy sauce: to serve and
  • Olive oil: 1 teaspoon
  • Salt & Pepper to season

When buying the ingredients you have probably more than one serving. Save it and eat the next day too.

How to make the Nori Omelet Wrap?

It is very easy and ready in 15-20 minutes. Whisk the two eggs in the bowl and add the turmeric together with some salt and pepper. Cut the herbs in small pieces and stir through the eggs. Heat up the frying pan with the olive oil and wait till the pan is hot. Put the eggs mixture in the pan and bake to a thin omelet (bake both sides). During the baking on a small fire you can clean the avocado and use three slices. Start building the wrap!!! Get the bamboo mat and put the nori sheet on it and then the salmon slices on top, add some of the wasabi on the salmon. Cut the omelet in the shape of the nori sheet and put it on top of the salmon. Put the avocado in a line at the beginning of the nori sheet and add sprinkle the sesame seeds on top. Roll the nori sheet firm (start on the avocado side) and let it rest a bit so the nori gets soft. Cut the rolls in half or in small “sushi” rolls.  Serve with the soy sauce and additional wasabi.

The wraps are easy to take away too!
