After my 10 days of Sport Fasting I want to eat all healthy again, with a lot of veggies and low in carbs. Days are getting colder and shorter, time to get into the kitchen and prepare myself some healthy comfort food: PIZZA TIME!!! But not with normal wheat dough, that will too much carbs at the moment, but with cauliflower. Cauliflower you think, uhhh can you make the bottom of the pizza with that vegetable? Yes, you can and it taste great. Perfect substitute and that makes the pizza healthier and will fit in a keto diet. You can choose what you like for your topping of course, I love to add tuna on my pizza for additional protein and without meat. I try to eat less meat and substitute with fish or sometimes even vegetarian. Check the recipe below, you will be amazed!
What ingredients do you need for two cauliflower pizzas ?
- 1,5 hour of your time
- Clean tea towel
- Kitchen brush
- Food processor /Blender
- Oven + oven plate
- Oven paper to cover the oven plate
Ingredients for the Pizza Crust
- Cauliflower: 1 cut in chunks
- Eggs: 2 biological preferably
- Spelt flour: 2 tablespoons
- Mozzarella: 100 gr grated
- Oregano: 1 tablespoon
- Garlic: 2 cloves and cut fine
- Olive oil: 2 tablespoons
- Salt & Pepper
Ingredients for the Pizza Topping
- Mozzarella: 100 gr grated
- Tomato frito: 100 ml
- Red onion: 1 large
- Bell pepper: 1 red
- Black olives: 18/10 pieces
- Tuna: 1 can of chunks (120 gr)
- Basil: 1 tablespoon dried
- Salt & Pepper
How to make the Cauliflower pizzas?
Start by heating up the oven at 180°/200°. Clean the cauliflower by removing the green leaves, you can use the inner part too, and cut in chunks. I used my blender and put 1/3 of the cauliflower per time to chop to a fine substance; it looks like wheat or puree. If you chopped it, put it in the clean tea towel. Cauliflower contains a lot of water and you want to get ride of most of it. By scrunching up the tea towel and squeeze as much liquid as you can out of the cauliflower. Repeat this a couple of times, mix the substance and squeeze as hard as you can; then transfer the cauliflower into a clean bowl.
You can put the cauliflower in the microwave for couple of minutes before doing the tea towel ritual, but if you chop the cauliflower very fine this is not necessary my opinion.
Add the rest of the crust ingredients, except the olive oil, in the bowl and mix all together (I used my KitchenAid mixer). You will see you will get a kind of dough! Put the oven paper on the oven plate and divide the cauliflower dough in two portions. Press the substance into two pizzas and put some olive oil on the sides of the pizzas with the kitchen brush. Put the plate in the oven and leave it there for ±25 minutes.
Time to clean your bench and cut all the topping ingredients. I used my mandoline slicer to cut the onion and bell pepper in even slices. Set everything ready and wait to crust to be ready. Time to decorate the pizza; first the frito tomato then the mozzarella, bell pepper, onions, tuna, olives and finish with the basil and salt and pepper. Put the pizza back in the oven for another 15 minutes. Keep checking your pizza!!
I will eat this pizza the next day too, so baked both the crusts cut the paper in half and put one pizza aside for tomorrow to finish.
