I normally prepare my meals on Sunday for the coming three days. By doing this I create myself some time on Monday and Tuesday for example to go to the gym. This week it was going to be a tropical weather, so wanted to bring my dinner meal to the beach and spend less time in the kitchen. I prepared my Spicy Chorizo Couscous meal, which taste very good warm but you can eat it like a salad too!!! Easy does it?!?! Spicy Chorizo Couscous: What ingredients do you need for 3/4 meals?

Ingredients
- Biological Couscous: 275 gr
- Chorizo spicy version: 250 gr
- Red onions: 2 red ones
- Peppers/paprika: 2 red ones preferably, but if you don’t have them no problem to use other colors.
- Green beans: 250 gr, clean and chopped in 2 cm long parts
- Raisins: 125 gr
- Soft goat cheese: 200 gr
- Mint: 15 gr fresh (keep some leafs as decoration for plating)
- Salt & Pepper
How to make Spicy Chorizo Couscous ?
Put the raisins and the couscous in a bowl, prepare like it is mentioned on the packing. Normally put boiling water on the ingredients and let it soak till the water is absorbed, stir in between. Cut the chorizo into small pieces (1 round I normally cut into 4 parts). Peel and chop the onions. Fry the chorizo and unions for 4 minutes in wok. You don’t need oil or butter, the chorizo contains enough fat to fry in. Put the peppers/paprika and green beans through and stir-fry another 4 minutes, until the green beans are tender.
Stir the couscous with raisins by the vegetable chorizo mixture and gently stir for about another 2 minutes and make sure that everything is a little bit red of the chorizo. Add the chopped mint to the mixture and season with salt and pepper if needed.
Scoop the meal on a plate, plates or container. Last, put the crumbled goat cheese on top and finish with a leaf of mint for decoration.
I don’t crumble the goat cheese if I keep the couscous in the refrigerator for the next day. I do that just before I eat, gives a fresh feeling. You can heat it up in the microwave and put it on top afterwards, if you that before the cheese will obviously melt…. Enjoy your Couscous meal!
