It’s getting Autumn!! Time to eat different kinds of foods. I try to eat the seasonal veggies and fruits; cheaper and fresher than eating strawberries all year. I run into the figs in the supermarket and thought make a dish out of that. Figs are super healthy, full of vitamins (A, B, C and K), minerals and fibers. They are decorative as well so that helped me to create this lovely breakfast. The chia pudding made of chia seeds is made overnight, so be prepared the night before. More chia blog recipes here. What ingredients do you need for two glasses of Figs Chia Pudding?
- 10 minutes of your time, but prepare the pudding the night before because the pudding needs to stiffen in the fridge for a night (or 5 hours)
- Glasses: 2 decorative ones
- Blender
- Chia seeds: 6 tablespoons
- Bananas: 2 ripe one
- Almond milk: 500 ml
- Protein vanilla powder or normal vanilla powder: 2 teaspoon
- Optional cinnamon: half a teaspoon
Toppings and Jam
- Figs: 8 pieces
- Nuts
- Agave sirup: 2 tablespoons
- Saucepan
Figs Chia Pudding: How to make it?
Put the banana, almond milk, cinnamon and protein vanilla protein powder in a blender and blend until a creamy and thick mixture arises. Put the mixture in a large enough jar and add the chia seeds. Stir all the seed and make sure that you distribute the seeds evenly through the mixture. Put the jar in the fridge and chill it overnight.
Next morning. Take a small saucepan, put 4 clean (take the dark skin off) figs and cut them in small pieces. Puree with a fork and put in the saucepan together with two tablespoons of agave sirup. Heat up the jam till it becomes a jelly substance. Let it cool of a bit. Start slicing 2 figs in thin layers; the other 2 cut them in 4 parts. Take the glasses and start putting the slices of figs on the side of the glass. Press them a bit so they will stuck to the glass. Then add the chia pudding in the glasses, till half way. Then take the jam and share among the two glasses. Then add the remainder of the chia in the glass. Top off with the parts of figs and crush the nuts and spread them on top at last.
Keep some nuts separate so you can add them when you finished the first, or put them as an extra layer in the glass.
