Sunday morning again and I was in a baking modes but I was not prepared at all. I looked at my ingredients in the refrigerator and fridge. I always keep frozen fruits in the fridge and the eggs, milk and oatmeal at hand, so I came up with Blueberry Oatmeal Pancakes!! Defrosted the fruits I needed; banana, blueberries and raspberries. Preferably you use fresh ones, but they where not at hand that Sunday morning in my kitchen! This breakfast is very filling due to the oatmeal. Oatmeal is one of the healthiest grains and it’s gluten-free. This nutritious whole-grain is full with important vitamins, minerals and antioxidants. It contains more protein than other fibers and helps to loss weight; the filling feeling make you eat less calories. What ingredients do you need for one large portion of these Blueberry Oatmeal Pancakes?
Ingredients:
- 20 minutes of your time
- Blender
- Frying pan
- Oatmeal: 75 gr
- Almond (or any other plant based) milk: 50-75 ml
- Banana: 1 small one
- Blueberries: handful defrosted or fresh if you have them
- Egg: 1 biological
- Coconut Oil: 1 tablespoon
- Vanilla protein powder: 1 teaspoon
- Nuts: 2 tablespoons crushed
- Red fruit: 1 serving to top
- Honey: 1 tablespoon
- Salt: 1 pinch
How to make these Oatmeal Pancakes?
Take the blender and add the oatmeal, egg, vanilla protein powder (you can leave this out or use vanilla drops), banana and the milk. Mix it till you get a batter for the pancakes.
Don’t add the milk all at once, you can add more to get the right structure of the batter.
You can make the oat flour first by blending them first and then add the rest of the ingredients.
Stir the blueberries and salt through the batter. Heat up the frying pan with half of the coconut oil. Bake 3 small pancakes in the pan and turn around when brown. Put the pancakes on the plate and fry the second round till the batter is finished. You will create 5 to 6 small pancakes. Top off with the crunched nuts, red fruits and honey. With this breakfast you can last till dinner time!!
