Açaí Breakfast Coconut Bowl

When I was in Bali I ate a lot of fresh ice fruit bowls. They are cold, healthy and besides that they look so pretty!! When I returned home, I needed to make those for myself as well to keep the holiday vibe alive. Actually it’s easy to make and you can vary endlessly with the ingredients!

This one is made with açaí (ah-sigh-EE), the “superfood” berry from Brazil, South America. The berries are full of antioxidants and stuffed with essential omega and amino acids. One healthy breakfast açaí bowl you make here! Check this Açaí breakfast bowl in this blog, but also my healthy delicious recipes in my other blogs.

What ingredients do you need for one Açaí Bowl?

  • 15 minutes of your time
  • Blender
  • Acai: take 2 tablespoons of açaí powder
  • Frozen banana: 2 frozen bananas
  • Frozen blueberries: a hand full/cup of frozen blueberries or/and other red fruits
  • Milk: 1 cup can choose any milk you like, coconut, almond, rice or normal. The less you use the thicker the ice will become.
  • Optional for additional proteins: 1 tablespoon of protein powder or hemp seeds

Toppings

  • Mix of fresh berries and strawberries
  • Mixed nuts
  • Optional Coconut flakes or chia seeds

Açai Bowl: How to make it?

Start cutting and preparing your toppings. By doing this in this order, you prevent the melting process before decorating and eating the ice of the bowl.

In my fridge I store always different frozen foods, the basis with 3 to 4 bananas packed in plastic freezer bags. When I clean a pineapple I use 2 or 3 parts directly and add 1 or 2 to the fridge. The same if do for a mango. Grapes and frozen berries are part of the basis too. This way I’m building a stock and can make a fresh ice cream fruit bowl any time I like.

Then add all the ingredients in the blender, starting with the soft and powder parts first. Otherwise all the powder will blow away by the pressure of the blades in the blender. Still you have to be on top of this process, I use a spatula (pannelikker in Dutch) to keep the ingredients down. Do this after turning off the blender!!!

If you see a smooth swirl in the blender the bowl is ready!!  Place in for example a coconut bowl or other nice bowl and decorate with the toppings you like.

I recycle the plastic bags where I keep the fruits in; I wash and let them dry. This way I use less plastic which is good to keep the oceans clean!!!!
